According to the email2trac config options adding the following to /etc/email2trac should results in only registered users' email addresses being able to open tickets and post comments via email:
white_list: white_list_registered_users: 1
So that have been set and testing on ticket:63 and it turns out that for it to work white_list does need a value, so updateing the config file to:
white_list: chris@webarchitects.coop white_list_registered_users: 1
Appears to fix this issue.
